Poppy Seed Spinich Salad

Introduced to me at a Fireman's Auxiliary Dinner.
I would eat this every day if i could.

Poppy Seed Spinach Salad

1 bag baby spinach
1 bag salad mix (the more exotic, the better)
1 purple onion, thinly sliced
1 cup finely grated cheese (1/2 yellow, 1/2 mozzarella)
1/2 lb bacon, crisply browned and crumbled (i like a bit more so i usually cook 1lb)

Toss the above ingredients in a large salad bowl.
Stir together the following dressing and pour over the salad just before serving:

1/3 cup vegetable oil
1/3 cup sugar
1 tsp. mustard powder
1/3 cup white vinegar
3 tsp. poppy seeds
3/4 tsp. salt
